The Mill
The mill is located in the town of Basse di S.Sebastiano in Cuneo, and the site covers an industrial area of 5,560 m2. Production reaches 200 tons of wheat milled per day. We are guided by our desire for continuous improvement and innovation through analysis and research.
For the past 80 years, the Mettone family has led the mill toward innovation through research and analysis. Under their leadership, the mill has experienced significant technological advancements, keeping pace with the times and producing outstanding products synonymous with the quality of Made in Italy.

Long ago, before the use of modern machines, grains were carefully selected, one by one. We respect this ancient practice and exert the same care during each step of the milling process, allowing us to produce healthy and quality products.
Our staff's attention to detail and search for technical perfection underpin all three phases of the process of transforming grains of wheat into flour: conditioning, milling, and packaging.
This care is applied both throughout the entire process and again when finished, through quality control and risk analysis. This guarantees the monitoring and traceability of raw materials, as well as ensuring the safety of the finished product.

La Farina di Cuneo is proud to have obtained a UNI EN ISO 9001:2015 certification, a reference for the production, packaging, and sale of soft wheat and durum wheat flours. This was made possible by our constant efforts in keeping our processes transparent, safe, and up-to-date.
We also hold a BRCS Food Safety Certification, which guarantees the safety, integrity, legality, and quality of food products from processing to packaging.
By preserving traditional and ancient milling techniques, we produce flour just like back in the day. We avoid exposing the grains to high temperatures, thus preserving the quality of the raw material and maintaining its beneficial properties and nutrients.
Our internal procedures are designed to be technologically innovative, while also respecting sustainability and incorporating traditional techniques.

The wheat is selected by our experienced and highly qualified staff. Every single grain embodies the simplicity and authenticity of this staple ingredient that forms the foundation of a balanced diet.
The research laboratory at the mill performs chemical, rheological, and microbiological analyses on both the incoming grain and the flour produced, allowing us to make healthy products and to develop a wide range of flour mixes. We use 100% Italian wheat from certified supply chains to guarantee a quality-controlled and safe product.
